Named after the mythological Irish horse Énbarr, a symbol of warmth, elegance and imagination, the restaurant is a space that feels intimate, refined and welcoming. Declan McGovern

Group Chef

Hailing from Ireland, Executive Chef Declan McGovern brings almost two decades of experience across Ireland, the UK and Australia, with a career that includes The Landmark London, Galway’s O’Grady’s on the Pier and Matt Moran venues in Sydney. Most recently, he delivered a masterclass at the National Celtic Folk Festival, sharing a taste of home through Irish ingredients and culinary storytelling. At Enbarr, he reimagines traditional Irish cuisine and hospitality through Victoria’s seasonal produce, celebrating the shared climate and flavours of both regions. The result is Irish cooking that feels modern and heartfelt, crafted for sharing - storytelling on a plate.
